Description
A warm, creamy, and flavorful white chicken lasagna soup made effortlessly in the crock pot. Packed with tender chicken, Italian herbs, creamy cheese, and noodles, it’s perfect for cozy nights and easy weeknight dinners.
Ingredients
2 cups cooked shredded chicken
4 cups chicken broth
1 cup heavy cream or half-and-half
8 oz cream cheese, softened
1 cup ricotta cheese
1 cup shredded mozzarella cheese, plus extra for topping
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
1 small onion, finely chopped
1 tsp dried Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
Salt and pepper, to taste
6 lasagna noodles, broken into bite-size pieces (or substitute with penne)
2 cups fresh spinach, chopped
Fresh basil or parsley, chopped (for garnish)
Instructions
In a crock pot, combine chicken broth, cream cheese, ricotta, mozzarella, Parmesan, garlic, onion, Italian seasoning, red pepper flakes, salt, and pepper. Stir well to combine.
Add shredded cooked chicken and chopped spinach to the crock pot. Mix gently.
Cover and cook on LOW for 4 hours or HIGH for 2 hours until hot and flavors meld.
About 20 minutes before serving, add broken lasagna noodles to the crock pot. Stir and cover again. Cook until noodles are tender, about 15-20 minutes.
Stir well before serving. Taste and adjust seasoning if needed.
Serve hot, garnished with fresh basil or parsley and extra shredded mozzarella if desired.
Notes
For best texture, cook noodles separately if you plan to store leftovers and add noodles only when serving.
You can swap lasagna noodles for penne or other pasta shapes.
Use full-fat cheeses to prevent curdling.
Leftovers keep well refrigerated for 3-4 days.
